Serve it for lunch or as a side, this refreshing salad needs to be on the menu. Lightly drizzle it with some balsamic vinegar for that extra flavor. It’s colorful, healthy and showcases different textures. 

Key Items Needed : 

 Mixed greens, cherry tomatoes, feta cheese, walnuts, salt, balsamic vinegar and pepper. 

Cooking Method: 

  • Start by tearing washed greens in a bowl. Next, cut cherry tomatoes into halves and crumble feta cheese. Also, chop walnuts and lightly toast them. 
  • Transfer all these in a bowl, season it with salt & pepper, drizzle some vinegar and toss it lightly. 
  • Lastly, sprinkle some feta cheese and serve it right away!

2. Fried Chicken 

Fried chicken is an excellent appetizer to add to your Mother’s Day meal spread. The perfect fried chicken has a beautiful golden brown crisp and crunchy skin with a juicy and moist filling. 

Key Items Needed : 

Chicken, vegetable oil, salt, pepper, crushed cornflakes/panko crumbs, and flour.

Cooking Method : 

  • Firstly, start by filling a large pot with oil and preheat it. 
  • Then for the seasoning combine flour, salt, and pepper in a bowl. Also, in a separate container mix buttermilk and water.
  • Cut the chicken in smaller pieces and season it with salt & pepper. 
  • Coat the chicken in the flour mixture, then in the buttermilk mixture, and once again in the flour mixture and finally roll it in a bowl of panko crumbs or crushed unsweetened cornflakes.
  • Fry both the sides of the chicken for 7 to 8 minutes in the pre-heated oil. 
  • Serve with ketchup, mustard or a fiery hot sauce.

Potatoes, spices, salt, lemon, tortilla wraps, and processed cheese. 

Cooking Method :

  • Add some oil, mustard seeds, curry leaves, asafoetida and green chilies in a pan. Cook till the seeds crackle.
  • Now add mashed potatoes, turmeric powder and salt. Mix well and cook for 2 to 3 minutes. 
  • After switching the flame, drizzle lemon juice and add chopped coriander. Mix it well. 
  • Heat the tortilla until it turns lightly golden. 
  • Now spread green chutney and potato mixture on half side of the tortilla. Also, sprinkle some cheese on top and fold the other empty side of the tortilla. 
  • Lastly, cook the tortilla on both sides with a little oil until it turns crispy. Serve it right away.

4. Thai Salad With Peanut Dressing 

It is crispy, fulfilling and oh so flavorful! And the creamy peanut butter dressing just makes the health quotient up. All you require is chopping a few vegetables and blending the sauce and here you will get your salad ready in minutes.  This salad will surely keep your mom hooked to it!

Vegetables (napa cabbage, red bell peppers, carrots and ripe mango slices), peanut butter, lemon, soy sauce, sriracha, peanuts, vinegar and water. 

Cooking Process : 

  • Cut all the vegetables into thin slices. 
  • For the dressing combine peanut butter, soy sauce, lime juice, vinegar, oil, sriracha and a little bit of water. 
  • Season the dressing with salt and pepper. 
  • Add the dressing to the salad and toss it well.
  • Top the salad with some roasted peanuts for that added crunch.

If your mom is not fond of salads, here’s a Mediterranean-inspired dish that you can make for her this Mother’s Day. These stuffed veggies will surely make one satisfying dish. 

The best part? There is NO wastage!

Key Items Needed : 

For peppers: Red and yellow bell peppers, green capsicum, beans, onions, olive oil, garlic and brown rice

For potatoes: Potatoes, paneer, onions, capsicum, sweet chilli sauce, pepper and salt

For tomatoes: Leftover potatoes, paneer, onions, capsicum, sweet chilli sauce, pepper and salt

Cooking Process : 

  • Start by preheating the oven to 350 degrees F. 
  • Next discard the stems, ribs and seeds from the peppers and place them in a casserole dish. Bake them for 20 to 25 minutes. 
  • In the meantime, cook the rice and keep aside. 
  • For the filling, heat a tbsp of oil in a pan, add onions, salt and cook until it turns tender. Also, add the tomatoes and cook for another 5 minutes. 
  • Season it with cilantro, cumin, chili powder and garlic. 
  • Now switch off the flame and add the rice, beans, and lime juice. Mix it well. 
  • After the bell peppers are roasted, stuff them generously with the rice mixture and top it with cheese. 
  • Finally, bake these for another 12 to 15 minutes until the cheese turns golden. 

To make stuffed potatoes, boil them halfway and cut them in half horizontally. scoop out centre and keep aside (use it for tomatoes). In a bowl add paneer, chopped onions and capsicums and season it with pepper, sweet chilli sauce and salt. Top it with grated cheese and bake for 10-15 minutes. Follow a similar procedure for tomatoes. Make sure you use all the potatoes that have been scooped out to stuff the tomatoes.
